SOSF Free (Salt Oil Sugar Flour Free) Vegan Sweet Potato Pie and SOSF Free Baked Sweet Potatoes (topped w/ cinnamon)..for the crust, I used Sandy’s Vegan Blogs and Blah’s recipe..1 and 1/2 cup of rolled oats, half of cup of unsweetened applesauce and a few scrapings of a vanilla pod..pulse in a food processor (or just thoroughly mix), just until mixture comes together, then spread in a pie pan and bake crust at 320 degrees for 20 min..for the filling, you can simply bake 2 sweet potatoes(These days I poke holes in them and bake for about 60 min at 450 degrees), then scoop the contents out and mix w/ 2 ripe bananas, process into a puree (or just thoroughly mix), stir in some cinnamon (and a pinch of nutmeg, ginger and allspice if you prefer – all season to preference)..spread filling in pie crust and bake at 320 degrees until it’s a consistency you’re comfortable with (I did about 40 min)..I included a pic of the baked sweet potatoes because, these days, now that I just eat when my body calls for fuel, and am no longer driven by cravings, keeping it simple is way more appealing to me and the baked sweet potatoes, fresh from the oven, topped w/ cinnamon, is reminding me of sweet potato pie, w/out the crust..and gratefully, for me, a Refined Food Addict and Overeater in Recovery, 10 months in to abstaining from salt, oil, flour, alcohol and sugar, it works.
